I was busy making drinking yogurt, when I thought about also making a healthy fruit syrup that will go well with it to add some flavor to it. And let’s be honest, it LOOKS good too! We eat with our eyes. It needs to grab our attention first.
You can blend it to have a smooth syrup, or you can leave it as is, and enjoy it with our homemade drinking yogurt or healthy homemade pancakes! It goes well with both recipes.
It is a thick syrup with small chunks of blueberry pieces that makes it even better. The added cinnamon brings out the flavor of the blueberries and adds a warm and sweet flavor to the dish.
It’s way better than jam because of its nutrient-dense properties. It is clean and vibrant and will make your family breakfast exciting!

Can I use other fruits for my syrup?

Yes, you absolutely can. In this recipe, I replaced the blueberries with strawberries and made a healthy strawberry pancake syrup. I mixed it in with my drinking yogurt and it was the best combination! You can use any fruit you like to make your own healthy homemade syrup for your baked goods, drinking yogurt or pancakes.
What sweeteners works best?
I would recommend using either honey or maple syrup. Those are your healthiest options. Though you can use sugar too, Organic honey and maple syrup are not refined as sugar is. Honey and maple syrup are less processed, they contain trace vitamins, minerals and antioxidants and they have a lower glycemic index.
This means they provide functional health benefits and raise blood sugar more slowly than table sugar.

Steps to making this delicious low-carb breakfast syrup recipe:
Step 1 – Rinse your blueberries thoroughly and add them to your pot. Add the vanilla extract, honey or maple syrup, sea salt, cinnamon and water to the pot too and let it come to a boil on medium to high heat. The cinnamon and vanilla extract will add some extra delicious and rich flavor to the blueberries. Make sure to give it a stir every now and then to make sure it doesn’t burn and all of the water doesn’t dry up.
Step 2 – After it has come to a boil, turn the heat down to low and let it simmer for about 10 minutes with the lid on. The blueberries should be soft.
Step 3 – Make your slurry with the extra water and cornstarch in a separate bowl or measuring jug. Make sure to whisk it until no lumps are left in the mixture. When done, add them to your blueberry syrup and whisk it in until it is combined. Let it simmer for another 2-3 minutes until the syrup starts to thicken up a bit.
Step 4 – Serve as is on your pancakes or pour them in jars to use later! Put the jars in your fridge for up to 10 days.

Nourish your body – Easy Blueberry-Cinnamon Syrup for Pancakes
Equipment
- 1 Measuring cups
- 1 Medium sized pot
- 1 Measuring jug or bowl to make your slurry in
- 1 Handheld Whisk
Ingredients
- 2 Cups Blueberries fresh or frozen
- 1 Cup of Water
- 1/4 Cup of Honey or Maple Syrup you can add more if you want it sweeter
- 1/2 tsp Vanilla Extract
- 1/4 tsp Cinnamon
- 1 Pinch of Salt for taste
- 2 Tbsp Water for the slurry
- 1 Tbsp Cornstarch
Instructions
- Add the blueberries, vanilla extract, cinnamon, salt and 1 cup of water to a medium sized pot and bring to a boil on medium to high heat.
- As soon as it starts bubbling, turn the heat down to low and let it simmer for about 10 minutes or until the blueberries are soft. Stirring occasionally to prevent it from sticking or burning. Keep the lid on.
- In the meantime, make a slurry in a measuring jug or bowl, by taking the 2 Tbsp water and 1 Tbsp cornstarch and mix it together until there are no lumps left.
- Add it to your syrup and whisk until combined. Whisk for about 2-3 minutes then turn off the heat.
- Pour the syrup into clean jars or pour it over your pancakes while still hot.
- The sauce will thicken up as it cools down too.
