I like using this syrup for my pancakes in the morning because pancakes have always been too dry for me to just eat on its own. I fixed that too with my ONE BOWL fluffy pancake recipe right here –Easy One-Bowl Fluffy Pancakes Recipe, but a good syrup can just make all the flavors POP!
Let’s get right into it!

| Serving Size | Time | How much you get out |
| 4 | 15 minutes | 10oz (1 Cup) |
Ingredients:
- 2 Cups blueberries, fresh or frozen
- 1/2 Cups honey, or sugar
- 1/2 Teaspoon Vanilla extract
- 1/4 Teaspoon Cinnamon
- Pinch of salt (for taste)
To thicken up your syrup:
- 2 Tablespoons water
- 1 Tablespoon Cornstarch
Instructions:
- Add the blueberries, vanilla extract, cinnamon and salt to a big saucepan and bring to a boil on medium to high heat.
- As soon as it starts bubbling, turn the heat down to low and let it simmer for about 7 minutes or until the blueberries are soft. Stirring occasionally to prevent it from sticking or burning.
- Make a slurry by taking the water and cornstarch and mix it together until there are no lumps left.
- Add it to your syrup and whisk until combined. Whisk for about 2 minutes then turn off the heat.
- The sauce will thicken up as it cools down too.
Serving:
Serve it with your homemade pancakes just as it, or if you like a smoother consistency, put the syrup in a blender and blenc for a few seconds.
Storing:
- I store mine in a glass jar in the fridge for up to 5 days.
