Quick and healthy Pancakes with Greek Yogurt

Fluffy pancake recipe

Your kids will love this!

I’ve been looking for a good pancake recipe for a while now, but sometimes we need to take the initiative step and just create our own perfect recipe. It’s a healthy recipe that has so much health benefits and is perfect to start your day with.

You can go the normal route and just use maple syrup on your pancakes, or you can change it up a bit and make it exciting with our strawberry, blueberry and raspberry syrups!

Why our Pancake recipe is different

Instead of vegetable oil in my pancakes, I use beef tallow. There are many risks with using some vegetable oils and the beef tallow gives them a great taste. Instead of milk, I combine milk and Greek yogurt to give them the great texture we love so much. BUT! There is a secret to how I mix the milk and yogurt too. You will find it HERE..

Tallow naturally contains fat-soluble vitamins A, D E and K, which support immune function, bone health and cellular repair.

I use raw milk and it contains naturally occurring fatty acids like CLA and Omega 3’s, which are linked to heart health and metabolism. (If you do buy raw milk, be sure to buy it from a trustworthy source that keeps the milking area clean).

Greek yogurt is high in protein, and it contains live bacterial cultures (probiotics) that support a balanced microbiome, which improves digestion and lower inflammation.

3 Tasty syrup Flavors

The recipe to the three fruit syrups I make will be added soon, and they go really well with these pancakes. They just burst with flavor. Even your guests will love them! They don’t take up a lot of time, and you’ll have everything done in no time!

This would be your consistency before adding to your pan.

They are ready to be turned over when these bubbles form on top.

  • 2 Eggs
  • 1/4 Cup sugar or honey (see note)
  • 1 Teaspoon baking powder
  • 1 Teaspoon Baking soda
  • 1/4 Teaspoon Salt
  • 1/2 Teaspoon Vanilla extract
  • 2 Tablespoons of Beef tallow (I like to use the Realgood Food Co one you get at Walmart)
  • 1 1/2 Cup All-purpose flour
  • 1 Cup Milk
  • 1/4 Cup Greek yogurt (see note)

Instructions:

  • Wisk together the sugar or honey with the eggs. I prefer the electric mixer, but you can do it by hand too. Beat until light in color and fluffy.
  • Add in the baking powder, baking soda, salt and vanilla extract and beat until just combined.
  • Next, add in the milk and Greek yogurt and 1 Tablespoon of the beef tallow (leave the other tablespoon for later) and fold it in with a spatula until combined.
  • Lastly, add in the all-purpose flour and beat again until there are no lumps.
  • Add a Tablespoon of Beef tallow in a pan to fry your pancakes in.
  • Scoop about 1/4 cup of the mixture onto a hot pan (per pancake) and leave it until bubbles form on top, turn around and leave for about 1-2 minutes then take off. (see note)
  • Serve with our homemade syrup or maple syrup! (recipe coming soon)

Note: Turn your heat to low so your pancakes don’t burn.

Note: I make my own yogurt with raw milk and organic Greek yogurt at home. The recipe will be added soon, but for now it’s ok to add them like I’ve added them in the ingredients list.

Note: These pancakes are not too sweet because I want to limit our sugar intake, but if you like yours a little sweeter, you can add more honey or sugar.
