Add the milk to a large pot and bring to a boil on medium heat. Add the cinnamon stick to get that rich and tasty flavor. And if you use the clove. This is where you add it in as well.
While the milk is coming to a boil, use an electrical hand mixer and beat the eggs for 2 minutes. Then add the granulated sugar and beat on high speed for another 2-3 minutes. The mixture should look foamy and creamy.
As soon as the milk starts to boil, turn the heat down to low so it can simmer until you have everything ready.
Add the flour, cornstarch and sea salt to egg mixture and mix well at medium speed. Just until everything is fully incorporated. The mixture will be a bit thicker.
Add the Vanilla Extract and give it a quick mix.
Add the egg mixture to the hot milk and keep the heat on low. With a spatula or wooden spoon, slowly mix everything together. Let it come to a soft boil and give it a stir every few seconds. Let it boil for about 5 minutes, then turn the heat off.
Add the 3 Tbps Unsalted Butter and stir it in until it is melted and fully incorporated. Take out the cinnamon stick and clove before pouring into the pie dish.
Add the milk mixture to the baked pie crust and lightly sprinkle cinnamon on top.
Leave it to cool down so everything can set. When it has cooled down and the pie dish isn't as hot anymore, you can put it in the fridge so it can set faster. This takes about 3 hours to overnight.
You don't want to cut into it while it is still hot. Your pie will fall apart. You want to wait until it is cold before serving.
When it is done, Serve and enjoy!
